His father Kenichi, now 82, maintains an impeccable appearance in his suits – a testament to his years in the apparel industry. Almost daily, he and his wife Shizue can be found in the restaurant, personally attending to guests.
The establishment’s other key figure is Shuya Nomura, the sommelier and maître d’hôtel, whose welcoming smile has become emblematic of the restaurant’s warm hospitality.
Tokyo-born Chef Fujiki, 53, is certified as a “Local Food Ambassador” by the Ministry of Agriculture. His cuisine celebrates each season: wild mountain vegetables in spring, highland produce in summer, mushrooms in autumn, and gibier in winter. Each dish is a tribute to the natural bounty of the Yatsugatake foothills.
